Saving Money On Eggs

 I asked my middle-aged daughter a question the other day. "How are you saving grocery shopping money nowadays?" Her reply was simple yet very profound.

"Buying less." she answered.

That's how, I thought, I should be addressing my own grocery spenditures. Buy less. Especially when it comes to eggs. I was currently paying $5.56 per dozen here at our local Aldi grocery store. A scant time ago, I was paying only ninety-nine cents (.99). I currently have three dozen eggs either in the fridge or freezer. To be honest, the last breakfast I had with two scrambled eggs just didn't excite me as much as it used to. How could it? How can anyone enjoy a meal that is horribly priced at sky high prices? So, I decided to substitute other foods for breakfast and only use the eggs I have on hand for recipes (quiche, meatloaf, cakes etc.)

For an extra boost of protein, I either add in a side order of organic chicken breakfast sausages or nitrate-free bacon. A cup of coffee. A dot of butter and some brown sugar, and breakfast is served!


I picked up all these organic goodies, at reduced prices, at our local Job Lot store. You'd be amazed at how few of these superb items are sold in standard stores. Stop by a Job Lot or Odd Lot store and compare the prices. You'll find you can still continue to have a healthy, decent breakfast, without any eggs and without draining your wallet.

  1. My secret weapon for eggs is tofu! If you like scrambled eggs and egg salad, you can make wonderful versions with tofu. Google Tofu Scramble for a recipe. For egg salad, just crumble the drained tofu and use your regular egg salad recipe adding extra mustard to help the color. Aldi tofu sells for around $1.39 at my store and I can get a large scramble for two and at least 4 egg salad sandwiches out of a package. And tofu is an excellent protein choice. Oh, and I use the old flax seed trick for baking without eggs, bet you do that too.

    1. Cherie, thank you so much for the tip! I had forgotten all about tofu. Especially good knowing I can buy it at Aldi. I use flax seed in my bread baking and smoothies. Super healthy. Thank you again for your comment.

  2. I ate 3 eggs for breakfast on Wed and Thur this week. Nothing takes the place of eggs for me.

  3. Hi Cindy. Our local Kroger sells all of Bob's Red Mill products. I use their flours and we eat that same oatmeal a couple of times a week. it is really good. We're not feeling the pinch with eggs since we still get ours for 3.00 a dozen locally. I'm glad because we do use a lot of eggs.

    1. Lori, my husband loves that oatmeal! I'm enjoying the cream of wheat. We have 2 neighbors that are selling their hens eggs. One charges $6 a dozen. The other pays my husband in bartering, so that's working out. I can't eat backyard eggs (I have a weakened immune system). But the last time I ate store bought eggs I got very ill almost immediately. Funny because we've been buying eggs from them for decades. Something is off. "shrug" Not my problem.   4. I've been babying my eggs here. I have one dozen plus four from another carton. It has to be really necessary in order for me to use even one.

    1. Hi Belinda. I'm with you! I've got 1.5 dozen in my fridge. 1 dozen in reserve in our basement and 1 dozen in the freezer for future baking, cooking etc. I have no plans to buy any more. At least for another month or so. I'm waiting to see what's happening. Who'd a thunk, right? Thank you for your comment. Hang in there!
